Low-Carb Ham and Cauliflower Casserole Au Gratin Review
Are you looking for a luscious dinner to serve your family and still keep it low-carb and keto friendly? Well, Tim and I made this casserole last evening and this recipe could be what you have been looking for.
We had some extra ham steak in the freezer. Wanting to use some of it up, I searched and found this recipe. As you can see in the title we thought this recipe was something SPECIAL! Special it is. This Casserole is pure lusciousness, and it’s packed with flavor. One thing that gives it so much flavor is the green onions. If you were to leave out the green onions you would definitely be disappointing your taste buds.
One of the ingredients the recipe calls for is Greek yogurt, which we did not have. Kalyn mentions in the recipe that you can exchange the yogurt for sour cream – which we did – naturally the good ole full-fat kind.
One downside of this recipe is the extra liquid that you are left with after baking. We used a steamer basket to make the cauliflower and made sure it drained a bit after steaming it. We also let it sit, after baking the casserole, for the 10 minutes mentioned in the recipe directions for the liquid to be absorbed. Even after the 10 minutes we still had liquid left behind when serving it up. This little downside is certainly not a reason not to give this recipe a try. The hope is that this evening when we dig into the leftovers that the extra bit of liquid will be absorbed after sitting in the refrigerator overnight.
