It’s Been A While
It has been a while since I have posted. First off I had writer’s block. Secondly, Tim and I traveled to see our grand-daughters (our son and daughter-in-law too – but as any grandparent knows it becomes about the grand-kiddos once you have them) and, thirdly, we both came down with colds after our trip. I know – excuses, excuses!
1st Tasty Meal
This first tasty meal is very simple but extremely delicious and very filling. A friend of mine from church mentioned it to me and then I heard Dr. Ken Berry mention that he makes something similar as well, so I had to try it. This recipe only takes a few ingredients:
- Scrambled ground beef (precooked) – your choice of how many ounces you want.
- 2 eggs (you could use 3 or 4)
- 1 Tablespoon heavy whipping cream
- Salt to taste
- 1 to 2 teaspoons (or to taste) of taco seasoning (we make up our own – you can find the link to the recipe in my blog post titled “So What Do We Eat on Keto WOL?” – scroll down – the link is towards the bottom)
- Some type of full-fat cheese (we use either mild cheddar or sharp cheddar).
Directions: Beat your eggs together with the heavy whipping cream. Heat up your precooked scrambled ground beef in a frying pan, add your taco seasoning and your egg mixture and scramble it together. Take off the heat and add your choice of cheese and cover till cheese is melted. Enjoy!
Actually, this recipe tastes similar to a low-carb Taco Pie recipe that I also linked to on my post “So What Do We Eat on Keto WOL?” What is great about it is it is all done on the stove top. No need for an oven.
2nd Tasty Meal
The second tasty meal is actually a meal we had at Rubio’s Coastal Grill. Tim’s boss forwarded an email he had received from Rubio’s making the following announcement: “Now Serving Keto-Style Tacos – Request a Keto-style cheese tortilla (just 2g of carbs) in place of flour or corn tortillas when ordering any of our tacos.” We just had to go give them a try.
I ordered two Classic Steak Tacos with the cheese tortilla (a la carte) without guacamole. Tim had the Grilled Gourmet Taco With Steak in the cheese tortilla with a side salad with lemon vinaigrette. We both enjoyed our meals and will definitely be going back. I also had some of their salsa and it was wonderful. You could really taste the cilantro which I really like. Tim said that the lemon vinaigrette was sweet so it must have had sugar so that would be one thing I would stay away from.
All in all, we were very pleased with the food and the service at Rubio’s Coastal Grill, Glendale, Arizona location. We both thought next time we would ask for double the steak.
The Phoenix area has 3 locations. Rubio’s is not a nationwide chain but you never know you might have one in your area. If you do be sure to give them a try.
