Crustless Low Carb Keto Cheesecake Bites Recipe Review
Over the holiday season, I tried a new recipe brought to us via Wholesome Yum by Maya. In her description of the recipe, she writes “Keto cheesecake bites+cheesecake fat bombs in one…” Her recipe calls for just 6 ingredients and only takes approximately 25 minutes to make. It makes 24 delicious (and may I say YUMMY) mini-cheesecakes.
The recipe is titled Crustless Low Carb Keto Cheesecake Bites.
I not only wanted to have something like a sweet treat for Tim and myself for our Christmas dinner. I also wanted to be able to make something to give to friends, especially my low carb friends. This recipe seemed like a perfect fit, and it was.
When I made them I did not have lemon juice on hand but they did not need it – they turned out great without it. I had some of the Raspberry Swirl left so I made myself some Keto Pancakes and used it as a topping for my pancakes. Can you see my lips smacking?
Since making them for Christmas I have made them one other time for a potluck meeting and they were a big hit, with people asking for the recipe.
Crustless Low Carb Keto Cheesecake Bites Receive High Marks
I give this recipe high marks and I will be making them again. These mini-cheesecakes are great for any occasion, not just for the Holidays. I would like to make them using strawberries instead of the raspberries. I hope you’ll give this recipe try!
Parmesan Folios Cheese Wraps Review

I had seen a post of Facebook (on a low carb/keto pages I follow) that Costco was selling Parmesan Folios Cheese Wraps. Well, the next time we made a shopping trip to Costco (which is often) I looked for them and – sure enough – I found them.
Crisp up quick
Folios cheese wraps crisp up quick in the microwave, in 1 1/2 minutes in our microwave. As per the package you do need to wrap or form them around whatever you are making fairly quickly.
How have we used them, so far?
We have made tacos with them. Tim likes to use them for a kind of Pizza Pocket. After crisping up the Folios, he folds in kind of like a taco, spreads in 1 Tablespoon of pizza sauce, adds shredded whole milk mozzarella and pepperoni and then pops it back to the microwave for a few seconds to melt the cheese. He really enjoys it. I like to fill mine with bacon, scrambled eggs, and cheese.
Overall, Folios Cheese Wraps Receive High Marks
We enjoy Folios and they are a great change of pace. I know we will find other ways to enjoy them. Please use caution, though, because they are very hot right out of your microwave. We have had a few that haven’t quite crisped up in the minute and thirty seconds so you might need to adjust the time. All microwaves vary, even ours does for crisping time.

I’ve made ham rolls with the Folios Cheese Wraps and they were great! I added salad and a tbsp of ranch dressing to it and rolled it up and it was excellent.
